SANTA’S COOKIES-Jan in BC 2 1/4 cups sifted all-purpose flour 1 tsp baking powder 1/2 tsp baking soda 1/4 tsp salt 1/2 to 3/4 cup sliced glazed cherries (red and green) 1/2 cup butter or margarine 1/2 cup shortening 1/2 tsp lemon extract 1/2 tsp almond extract 1/2 tsp vanilla 1/2 cup white sugar 1/2 cup brown sugar 2 eggs, well beaten
Sift dry ingredients together. Add cherries, mix well. Cream butter and shortening until fluffy. (I use the kitchen aid mixer) Add flavourings and both sugars. Beat well. Add eggs and beat again. Stir in the dry ingredients mixed with cherries. Mix well. Chill dough at least 1 hr. (i’ve left it overnight) Shape is into rolls about 2 inches in diameter. Wrap and store in freezer until needed, then slice about 1/4 inch thick with a sharp knife. Bake at 375*F for 7 to 8 minutes until golden brown. Jan’s Note: use dough frozen, thawed very slightly if too hard to cut. DO NOT try to roll out and cut with cutter. Doesn't work very well
