Hummus Vegetable Dip-annrms 1 (16oz.) container hummus ¼ cup each red onion, Italian green pepper, red, orange, and yellow bell pepper, small dice, divided ¼ cup minced fresh parsley Place vegetables in a bowl. In another bowl, mix hummus and half of the vegetables. Spread into a deep dish pie plate. Mix parsley and remaining vegetables and sprinkle over the top of the hummus mixture. Serve with falafel, Tostitos, or pita chips. If you have a toaster oven, these mini-taco bites are easy to make in batches so the shrimp is warm and crispy and contrasts with the crunchy, creamy, smoky slaw.
