Corn, ways to freeze-dawdawco
I have only frozen corn on the cob a couple of times in all my years of freezing and canning. I blanched it, (pain in the butt) and froze it in Food Saver bags (machine sucks the air out then seals bag.) My opinion is that the storage takes way too much freezer space for amount of food. I have in the past shucked, silked and cut off the cob then scrap the cob w/back of knife put in pot w/a little sugar and water and cooked about 7 or 8 minutes. I cool it and bagged in Food Saver bags...lay flat in single layer on sheet pan and freeze..they are easier to store as they can be stacked or stand in small plastic tray once frozen. I am going to do some corn this year and am going to make one change. Instead of shucking corn I am going to use the micro wave method.....put 1 or 2 ears at a time in microwave for 3-5 minutes.....using mitts take out, cut stem end off 3/4 inch then pick up small end and shake and squeeze....corn slides out slick as a whistle leaving silks in the shucks. I plan to proceed with cutting off the cob and scrapping w/back of knife...adding a little sugar and water..cook briefly..cool...bag and seal. That may be a lot more info than you ever wanted..Doris
