Tiramisu-Wilderness
Tiramisu Cake ¼ C margarine or butter ¼ C milk 2 eggs ¾ C sugar ¾ C Flour 1 tsp baking powder ¼ tsp salt 1/4 tsp vanilla ¾ C hot strong coffee 1 T sugar Topping 1 8oz pkg cream cheese softened 1 8oz container mascarpone cheese 1/3 C powder sugar 2T Marsala wine or dark rum 1 pint whipping cream ½ oz grated semi sweet chocolate
Heat oven to 375. Spray 12x9 inch pan with nonstick cooking spray. In a small saucepan or 2 cup microwave-safe cut, heat butter and milk until steaming hot. Meanwhile, in large bowl, beat eggs at high speed until light. Gradually beat in ¾ cup sugar; beat an additional 2 minutes. Lightly spoon flour into measuring cup. Add flour, baking powder salt vanilla nd hot milk mixture; beat at low speed until smooth. Pour into sprayed pan
Bake at 375 for 14-16 minutes or until cake springs back when touched lightly in center. In 1 cup measure, combine coffee and 1 T sugar;, mix well. Drizzle over warm cake. Cool completely. In large bowl combine cream cheese and mascarpone until smooth and creamy. Beat in powdered sugar and wine. In large bowl, beat whipping cream until stiff peaks form. Fold into cream mixture until combined. Spread evenly on cake. Sprinkle grated chocolate over top of cake. Cover and refrigerate at least 4 hours or overnight. Cut into squares to serve. 15 servings.
You could us rum extract in place of liquor. I would start with maybe 1/4 tsp and taste.
I have used mini chocolate chips on top
