Spaetzle-wilderness
2 C flour 3/4 C milk 1 tsp salt 1/4 tsp grated nutmeg 2 eggs beaten 1/2 C fine bread crumbs 1/4 C melted butter Mix flour and salt together. Make a well in flour and add eggs. Slowly add milk and stir until you have a soft dough but not too soft. It will depend on the method you use to cut the dough. Bring 1 gallon of salted water to a boil. Cut dough into water that isn't quite boiling until it floats. Remove and drain well. Toss in melted butter until coated then toss in bread crumbs. There are many methods of making the dumpling. One of the easiest to put the dough in a calendar and push to dough through with the back of a spoon so it drops into the water. A simple ziplock bag with a corner snipped off to make a small hole to squeeze the dough through. Even a potato ricer will work and is most like a spaetzle maker that you can buy on Amazon.
