Paprika Schnitzel-wilderness
4 Boneless Center Cut Pork Chops 1/2" thick 1 medium onion thinly sliced 1 clove of garlic minced 1/4 cup all purpose flour 1C sour cream 1/3 C condensed consomme 1 T paprika 3 drops Tabasco sauce Oil for frying This is where it becomes my version 1 sleeve of saltine crackers 2 eggs beaten
Put crackers into food processor and process until they become a fine cracker crumb.
Pound pork to 1/4" thick
Cook onions and garlic in hot oil until onion is soft but not brown. Remove from pan.
Dip pounded pork into flour that has been seasoned with 1/2 tsp of salt and 1/4 tsp pepper. shake excess flour off.
Dip into egg and then into cracker crumbs. Carefully put into hot oil and cook until golden brown and crispy on both sides.
Return onion and garlic to pan, mix remaining ingredients together and pour over meat. Cover and simmer 10-15 minutes until meat is cooked through.
I find that meat is usually completely cook when done browning. I place in a warm oven while I cook the onions, garlic, consomme, paprika, and tabasco until simmering but not boiling. Serve with sauce spooned over the meat.
