Oklahoma Caviar-Tammy
1 can (16 oz.) black beans 1 can (8 oz.) shoepeg corn 1 can (16 oz.) Rotel tomatoes 1 bunch green onions, diced 1 yellow pepper, seeded and diced 1 red pepper, seeded and died 1 green pepper, seeded and diced 1 c. chopped fresh tomatoes 1/4 c. chopped fresh parsley or cilantro 1/4 red wine vinegar 3 T. lemon juice 1/8 t. cumin 1 clove garlic, minced cayenne pepper chili powder garlic powder
Drain beans and corn. ( I rinsed the beans also). Combine all ingredients except the seasonings. Stir to blend. Add seasonings. Serve with corn chips, or toasted pita bread.
