Zucchini Soup II-wilderness
1 Pound Italian Sausage-I use hot 1 Cup Chopped Onion 1 Cup Chopped Celery 1 Small zucchini cut in chunks 1 quart tomatoes 1 green pepper chopped 1 tsp oregano 1 tsp Italian seasoning 1 tsp basil 1 tsp salt
Brown sausage (I take it out of the casing or slice it up). Drain off fat. Add remaining ingredients except green pepper. Simmer ½ hours. Add green pepper and cook 10 minutes. I used to throw it all in the crockpot after the sausage was browned and cook on low for 6-7 hours.
