KAFTA-annrms 2 pounds ground beef, lamb or mixture 1 onion, diced fine 1 bunch Italian flat-leaf parsley, stemmed and minced 1/2 tsp. allspice or to taste black pepper and salt to taste 1/2 cup breadcrumbs Mix all the ingredients, form into patties (traditional is to form into logs and put on soaked wooden skewer), and grill, broil, or try. KAFTA dinner Spread the meat mixture in an oiled baking dish to 1-inch thickness. Arrange 5 peeled and 1-inch slices potatoes over the meat. Cover with 2 large diced tomatoes. Mix 1 8oz. can tomato sauce with 1 cup water. Pour over top. Sprinkle with salt and pepper and oil. (put your thumb over part of the spout of the oil bottle and lightly sprinkle drops onto the mixture) Bake at 400° for about 45 minutes. I test at 35 for 160°.
The owner of our favorite bakery uses cooked bulger wheat instead of bread crumbs and I do use it, but bread crumbs works just fine. To make bulger...measure scant 1/4 cup into a bowl. Pour over 1/2 cup boiling water. Let sit until grains are plump...about 15 minutes. Drain off excess water.
