Rhubarb Jello crisp-plantdoctor
3/4 cup softened margarine or butter 1 cup brown sugar 1½ cup quick cooking oatmeal 1½ cup flour 2 tsp cinnamon 1 cup water 1 cup sugar 2 Tbsp flour 1 box strawberry jello (3 oz)
Mix all together margarine, brown sugar, flour, cinnamon and oatmeal until it resembles coarse crumbs. Press ½ the crumb mixture in bottom of 9 X 13 pan.
Put 6 cups chopped rhubarb on top of crumb mixture.
In a pan bring sugar, water, and flour to a boil. Boil until it starts to thicken, stirring constantly. Pour over rhubarb.
Sprinkle the jello powder over the rhubarb and top with remaining crumb mixture.
Bake at 350º for 45-55 minutes.
