Rhubarb Whip ( I love it served with lemon bars or lemon cake)-plantdoctor
4 cup rhubarb cut fine ½ c. cold water ½ c. sugar ½ c. whipping cream, whipped (can substitute cool whip in a pinch) ¼ c. water fresh strawberries halved 1 (3 oz) pkg strawberry jello
In saucepan combine rhubarb, sugar and ¼ c. water. Bring to a boil. Cover and cook on medium heat 8-10 minutes. Add jello. Stir until dissolved and then stir in ½ c. cold water. Chill until partially set. Whip until fluffy. Fold in whipped cream. Garnish with fresh strawberry halves (I omit the garnish since I can't eat strawberries)
