RHUBARB MARMALADE (Jehane Benoit's Encyclopedia of Cooking)-tasty
6 wcups rhubarb, chopped into half inch pieces Rind and juice of two oranges (shredded) Rind and juice of one lemon (grated) 5 cups of white sugar Half teaspoon salt.
Put all ingredients into a pot, bring to a boil, and simmer until until the desired consistency is reached and the marmalade will set. Pour into warm sterilized jars and seal. Makes about 6 regular jars of jam.
