Stir Fry Sweet and sour Chicken-wilderness
1 large boneless skinless Chicken Breast Cut into chunks 1/2 green green pepper cut into chunks 1 small onion cut into 8 wedges 1 small can pineapple chunks in own juice reserve liquid 1 individual can of pineapple juice 1/4 C water 2 T corn starch 1/4 C vinegar (I use rice vinegar but anything but balsamic will work) 1/4 C Brown Sugar 2T Soy Sauce Oil
Prepare the vegetables and meat. Drain the pineapple and reserve liquid. Add enough from the can of pineapple juice to make 3/4 of a cup.
Stir fry chicken and remove from pan, stir fry vegetables and remove from the pan.
Add vinegar, brown sugar, pineapple juice and soy sauce to pan, bring to a boil, make a slurry with the water and corn starch and add to the pan. Stir until it starts to thicken and add vegetables, chicken and pineapple to pan and mix. Continue heating until everything is warmed through. Serve over boiled rice.
That is the amount I make for myself and usually get 2 meals out of it
