Basic Stir Fry-wilderness
There are 4 basic ingredients that I us-meat, 1/2 of bell pepper cut into strips, 1 onion the size between a golf ball and a baseball cut into 8 wedges and 2 stalks of celery cut on the bias about an inch long. From here you can build. Meat choices-1 large boneless skinless chicken breast, or 1 large boneless pork chop or about an 8 oz. piece of top round london broil. There are a lot of recipes available for shrimp also. Pantry items-corn starch, oil, soy sauce, chicken stock and beef stock. (for the stock you can use bouillon cubes or soup base) Prep everything before you start cooking as it goes quickly. Add oil to pan to coat bottom of pan (I like things spicy so I use part vegetable oil and part chili oil) Heat to almost smoking Add meat and stir until meat at desired doneness, remove from pan and add vegetables and again stir while cooking. I like my vegetables al dente but that is an individual preference. Add meat back to pan, cover everything with stock, add soy sauce to taste (I use anywhere from 1/4 to 1/2 cup) Bring to a boil and add a corn starch slurry to make a light sauce. You don't want it too thick. Serve over hot rice.
