Healthy Vegetable Fried Rice-annrms I recently made some cauliflower “rice” for a recipe. I got to thinking about what else I could “rice”, and when I spied a bag of broccoli slaw I had an inspiration! 1 bag broccoli slaw 1 small onion, chopped 1 clove garlic, chopped 2 containers of Minute brown and wild rice. 2 tablespoons Canola oil 1 teaspoon refrigerated bottled ginger, or to taste 1 tablespoon soy sauce, or to taste 1 teaspoon sesame oil, or to taste 1 teaspoon Sambal Olek (Hot chili paste), optional Add the broccoli slaw, onion, and garlic to food processor. Pulse to rice the mixture, scraping down the sides once or twice. Heat oil in a non-stick add vegetable mixture, ginger, soy sauce, and Sambal. Sauté until vegies just begin to soften. Stir in rice. Heat through and serve.
