Beef Stir fry-Wilderness
1/2 pound of steak ( use top round) sliced very thin 1 medium onion cut into 8 wedges 2 stalks of celery cut in 1" pieces on the bias 1 green pepper cut julienned 1 T fresh grated ginger (do not use dry ginger) 3 C beef stock 1/4 C soy sauce 3 T corn starch 1/2 T chili oil 2T Vegetable oil Prep meat and vegetables. Add chili oil and vegetable oil to wok and heat until almost smoking. Add beef and stir fry until desired doneness. Remove from pan and add vegetables and stir fry until crisp tender. May have to add a little more oil while doing the vegetables. Add meat back in and ginger, beef stock and soy sauce. Bring to a boil, mix corn starch with 1/4 C water and stir into mixture to thicken. Serve over hot rice. For a variation I omit the corn starch, remove the vegetable to the bowl with the meat then add the stock, ginger and soy sauce. Bring to a boil and then add enough thin spaghetti for 2 serving. I usually break the spaghetti in half. Cook until spaghetti is done and liquid has reduced, add meat and vegetables back in, warm through and serve in bowls.
