Sausage tortellini Soup-Tammy
1 lb Italian sausage
1 large onion, chopped 1 garlic clove, pressed 3 cans (14.5 oz each) beef broth 2 cans (14.5 oz each) diced tomatoes - do not drain 1 c. dry red wine 8 oz tomato sauce 2 carrots, sliced 1 T. sugar 1 t. Italian seasoning 2 small zucchini, sliced 9 oz refrigerated style cheese tortellini 1/2 c. shredded Parmesan
Discard sausage casing. Cook the sausage meat with onion and garlic in a Dutch oven until meat is crumbled and no longer pink. Drain. Stir in next 7 ingredients. Bring to a boil, reduce heat, and simmer 30-45 minutes. Skim off any fat. Stir in zucchini and tortellini. Simmer 10-15 minutes. Top each serving with cheese.
