LEMON DREAM CAKE-Tammy
1 box lemon cake mix 4 eggs 1 can lemon pie filling (22 oz)
frosting: 8 oz cream cheese, softened 1/2 c. butter, softened 2 c. powdered sugar 1 1/2 t. vanilla
In a large bowl combine cake mix and eggs until well blended. old in pie filling. Spread in an 15 x 10 inch pan. Bake 18-20 minutes. Cool. Blend all frosting ingredients and spread on cooled cake.
My changes- I make the cake as directed above. I put it in two 8 x 8 pans lined with parchment paper. I did it that way so I could just take 1 pan to the coffee shop. For the frosting, it was a very heavy frosting so I added a few drops of fat free half and half to lighten it up. I also always add a tiny dash of salt. I added a few drops lemon extract, and probably only used about 1/2 t. vanilla.
