APRICOT ALMOND BARS-Tasty TOH
Crust:
1½ c cups flour ¾ cup confectioners sugar ½ cup butter softened ¼ cup shortening
Topping:
1 egg, lightly beaten ½ cup sugar ½ cup apricot preserves 1 tbsp butter, softened ½ tsp vanilla extract 1 cup sliced almonds.
In a mixing bowl, beat flour, sugar, butter and shortening. Pat into the bottom and ½” up the sides of an ungreased 13 x 9 x 2 pan. Bake at 350 for 18 - 20 minutes or until lightly browned.
For topping, beat egg, sugar, preserves, butter and vanilla in a mixing bowl until smooth,. Spread over hot crust. Sprinkle with almonds. Bake @ 350 for 15 - 20 minutes. Makes 30 - 36 bars.
