Sausage Casserole-emr
2 lbs. sausage (1 lb. mild, 1 lb. hot), crumbled, browned & drained 2 medium onions, chopped 4-5 sticks celery, chopped 1 stick butter 1 large pkg. wide egg noodles, cooked & drained 1 can cream of chicken soup 1 can cream of mushroom soup 1 can evaporated milk 1/4 lb. Velveeta cheese 1 sleeve Ritz crackers, crushed 1/2 stick butter, melted
Saute onions and celery in butter. Mix soups, milk, and Velveeta together in saucepan and heat until Velveeta is melted. Mix sausage, vegetables, and soup mixture in 9x13 baking dish. Mix crushed crackers with melted butter and sprinkle over top. Bake at 325 degrees for 30 minutes.
Here is the version I made tonight -- which we enjoyed very much! I cut it in half and eliminated some of the prep.
1 bag Jimmy Dean sausage crumbles 1/2 large pkg. wide egg noodles, cooked and drained 1 small can peas, drained 1 can cheddar cheese soup 1/2 soup can evaporated milk 1-2 tsp. hot sauce 1/2 sleeve Ritz crackers, crushed 2-3 Tbsp. butter, melted
Mix soup and milk, and stir in hot sauce. Combine with sausage, noodles, and peas in 9x9 pan. Mix crackers with melted butter and sprinkle over top. Bake at 350 degrees for 30 minutes.
