Raspberry Coffee Cake II-Tasty 1 1/4 cups all-purpose flour 1/2 cup granulated sugar 1/2 teaspoon baking powder 1/2 teaspoon baking soda 1/2 teaspoon ground cinnamon 1/8 teaspoon salt 2/3 cup buttermilk 1 beaten egg 3 tablespoon cooking oil 1/2 teaspoon vanilla 1 cup fresh or frozen Raspberries Topping: 2 tablespoons brown sugar 1 tablespoon all-purpose flour 1/4 teaspoon ground cinnamon 2 teaspoons margarine or butter
Lightly grease and flour a 9 x 1 inch round baking pan; set aside. In a large mixing bowl stir together the 1 1/4 cups flour, granulated sugar, baking powder, baking soda, the 1/2 teaspoon cinnamon, and the salt. In a small mixing bowl stir together buttermilk, egg, oil and vanilla. Add to dry ingredients. Stir till smooth. Pour batter into prepared pan. Sprinkle berries over batter.
In a small bowl combine brown sugar, the 1 tablespoon flour, and 1/4 teaspoon cinnamon. Cut in the margarine. Sprinkle over top of berries. Bake in a 350 oven for 30 to 35 minutes or till a wooden toothpick inserted near centre comes out clean. Cool slightly; serve warm.
