Retro Cheeseburger Pie-cooktocook
Ingredients: 2 t. oil 1 1/2 cups onion, chopped 1/2 t. salt, divided 1 pound ground beef 1/4 cup ketchup 2 T. mustard 1 t. spice rub (I just used McCormick Perfect Pinch--salt free) 1/2 cup flour 1 t. baking powder 2 T. butter, cut into small pieces 1 cup whole milk 1 large eggs 1 cup sharp cheddar cheese, shredded
Directions: Preheat oven to 400*. Mist a 9" pie dish with cooking oil. Warm oil in a large skillet over medium high heat. Add onion and 1/4 t. salt. Cook until golden and tender, about 5 mins.--stir often. Add beef; cook until no longer pink, crumbling the meat with a spoon. Stir in ketchup, mustard, and seasoning. Cook 1 min. longer. Transfer to pie plate. Whisk together flour, baking powder, and remaining salt in a medium bowl. Using pastry blender of fingertips, work the butter into the mixture until crumbly. Whisk milk and eggs in a small bowl, pour into the flour mixture and whisk until well combined (will be a little lumpy). Pour slowly and evenly over the meat mixture. Sprinkle the cheese over the top. Bake in the center of the oven until golden brown on top and slightly puffed and set, approx. 20-25--a thin knife blade should come out clean (I did 25 mins. and would next time increase it by a few mins. longer). Let rest a few mins. before serving.
