Pepper Hash-wilderness
52 bell peppers 13 medium onions
Chop fine and mix. Pour boiling water over them and let set 5 minutes. Drain. Pour more boiling water over and let stand 5 minutes.
Add 6 cups of vinegar, 5 cups of sugar and 3 Tablespoons of salt.
Heat to a boil and continue to boil until scalded through.
Put in jars and seal.
I am sure if you are selling this you would want to process it in a water bath. I put it up in 1/2 pt. jars. I would say 10 minutes for the processing.
When I make it I make 1/3 of a batch.
