Mexican chicken casserole-Tammy
1 chicken, cooked and meat diced - I used 3 small chicken breasts 1 bag Fritos 2 cans mild enchilada sauce (about 8 oz each) 2 c. grated or cubed Velveeta 14 oz can chicken broth 1 can diced green chilies-drained 1-2 c. shredded Cheddar
In a saucepan, heat the enchilada sauce, broth, chilies, and Velveeta. Set aside after cheese melts. In a greased baking dish, layer half of Fritos, half of chicken then repeat layers. Pour sauce over all. Top with Cheddar. Bake 20-30 minutes at 350*.
It's very easy, and tasty, too. The fritos get a litle soggy but the flavor is good. I imagine you could substitute Dorito style chips or corn tortillas.
