Horseradish Potatoes-pippin 1/4c butter 1/4 tsp pepper 2T fresh lemon juice 1/2 tsp salt 2T horseradish 1 1/2 lb. small new potatoes Preheat oven to 350 degrees. Melt butter in a casserole dish in oven. Stir in salt,pepper, horseradish & lemon juice. Cut potatoes in half,add to butter mixture & toss well. Cover & bake 1 hour or until done

Cooktocook-A very different and tasty potato recipe! Although not a heavy horseradish taste due to the fresh lemon juice, salt, and pepper, you can indeed taste it and smell it. I did follow the recipe as is, however, I doubled the sauce I mixed the potatoes in as it just didn't seem like it would be "saucy" enough for my measured out 1 1/2 pounds of potatoes. My little potatoes weren't quite tender at 45 minutes, so I covered the pan with foil for the last 15 minutes of baking time. DH and I enjoyed this yummy potato dish and I will be making them again!
