Roasted Greek Potatoes with Feta Cheese annrms
Arge Salvatori, Little Ferry, New Jersey TOTAL TIME: Prep: 15 min. Bake: 40 min. YIELD:8 servings Ingredients 2/3 cup water 1/2 cup olive oil 3 tablespoons lemon juice 4 garlic cloves, minced 2 teaspoons dried oregano 1 teaspoon salt 1/2 teaspoon pepper 3 pounds Yukon Gold potatoes (about 6 medium), each cut into eight wedges 3/4 cup crumbled feta cheese Directions 1. Preheat oven to 450°. In a small bowl, whisk the first seven ingredients. Arrange potatoes evenly in a shallow roasting pan. Pour water mixture over top. 2. Roast 40-50 minutes or until potatoes are golden brown and tender. Sprinkle with cheese. Yield: 8 servings.
