Double Chocolate Banana Muffins-annrms Donna Brockett, Kingfisher, Oklahoma YIELD: about 1 dozen. Ingredients
1-1/2 cups all-purpose flour 1 cup sugar 1/4 cup baking cocoa 1 teaspoon baking soda 1/2 teaspoon salt 1/4 teaspoon baking powder 1-1/3 cups mashed ripe bananas (about 3 medium) 1/3 cup canola oil 1 large egg 1 cup (6 ounces) miniature semisweet chocolate chips
Directions
1. Preheat oven to 350°. Whisk together the first six ingredients. In a separate bowl, whisk bananas, oil and egg until blended. Add to flour mixture; stir just until moistened. Fold in chocolate chips. 2. Fill greased or paper-lined muffin cups three-fourths full. Bake until a toothpick inserted in center comes out clean, 20-25 minutes. Cool 5 minutes before removing from pan to a wire rack. Serve warm.
