Iced Pumpkin Cookies-Tammy
1 c. butter, softened
1 c. firmly packed dark brown sugar
1 egg
1 c. canned pumpkin
2 c. flour-DIVIDED
1 c. golden raisins
1/2 c. chopped walnuts
2 t. grated orange peel
1 t. baking powder
1 t. pumpkin pie spice
1/2 t. baking soda
1/2 t. salt
3 T. butter, softened
3 c. powdered sugar
1/4 c. orange juice
Preheat oven to 350*. Cream the butter, gradually adding sugar until well blended. Beat in egg and pumpkin. Mix raisins, nuts, and peel with 1/4 c. flour. Set aside. Combine remaining flour, pie spice, soda and salt. Gradually add to creamed mixture. Beat just until blended. Stir in fruit/nut mixture. Drop by teaspoon onto greased baking sheet. Bake 12-15 minutes. Remove to racks to cool. Mix 3 T. softened butter, with powdered sugar. Slowly add orange juice and beat until smooth. Frost the cooled cookies. Makes 4 dozen.
