Horry County Chicken Bog-emr
1 chicken, cut up (2-3 lbs.) 1 ham hock 1 onion, peeled and quartered 1 lb. Hillshire Farms smoked sausage, sliced 2-3 cups rice 2-3 tsp. salt black pepper to taste
Place chicken in large pan with ham hock and onion. Add water to cover. Bring to a boil, lower heat and cook till chicken is tender. (This can also be done in a crockpot, overnight or all day.) Let cool and take meat off bone. (If there is enough meat on the ham hock, I use it too.) Discard ham hock and onion. Strain and measure broth -- will need at least 2 cups broth for each 1 cup rice. Place chicken meat in broth along with sliced sausage and black pepper. (You can finish it by cooking the rice at this point, or simmer broth as long as needed until ready to cook the rice.) Bring to a boil and add rice and salt (1 tsp. salt for each cup rice). Reduce heat, cover, and cook about 25 minutes or till rice is done.
