Tortilla Soup-Tammy
4 T. butter 1/3 c. oil 1 large onion, chopped 1 fresh jalapeno, seeded and chopped (add more if you like it spicy) 4 cloves garlic, minced 2 large carrots, diced 6 ribs celery, diced 1 lb boned, diced raw chicken meat 1 t. chili powder 1 t. salt 1 t. lemon pepper 1/2 c. flour 14 oz can diced tomatoes (fire roasted is nice) 4 cans chicken broth (10.5 oz each) 2 T. lime juice chopped fresh cilantro for garnish sour cream for garnish tortilla strips grated cheddar cheese( or cheese of your choice) diced avocados for garnish Heat butter and oil in a large pot; saute onion, jalapeno, garlic, carrots, celery and chicken for 5 minutes. Add chili powder, salt, lemon pepper, and flour. Add tomatoes and broth. Bring to a boil. Reduce heat and simmer 1 hour. Add lime juice and cilantro. To serve place some tortilla strips in bowl, top with soup. Garnish. Serves 10-12
