Another easy peasy recipe. The 'stuffing' is actually there to protect the scallops from overheating, they don't need much cooking..or any they make very nice sushi. So, the nice buttery crumb topping is a bonus. Easy on the seasoning, as cracker crumbs have plenty of salt.
BAKED STUFFED SCALLOPS
½ pound fresh scallops. 1 tablespoon butter ¼ cracker or fresh bread crumbs Cooking spray
Preheat oven 350° Saute fresh crumbs in butter until all the butter is absorbed. Place scallops in greased casserole. Top with bread crumbs. Bake 12-15 minutes, or until the scallops are just firm to the touch.
