“I had to stop by a meat market today for an errand not related to meat...but since I was there, I picked up a pound of segmented chicken wings, about ten or twelve. I don't usually buy them special but they were inexpensive. Usually I detach them from any whole chickens I buy, segment them into pieces then store them in a zipper bag in the freezer. I make them up after I have collected about a dozen. “Restaurants deep fry these puppies, I hardly ever fry anything. I have a very tiny kitchen and I loathe washing grease off the walls. These are oven baked, they aren't as finger licking juicy as the ones from the bar, but they will do.”
BUFFALO WINGS 10-12 wing segments ¼ cup Buffalo wing sauce 2 tablespoons flour Salt Pepper Cooking spray
Preheat oven to 350° Pat wings dry with paper towels--if they aren't dry first they get all clumpy and sticky. toss wings with salt, pepper and flour. spray baking sheet with cooking spray. Bake 25 minutes, turn over and bake another 25 minutes. remove from the oven. toss in a bowl with 1/4 cup buffalo wing sauce. Let set for a few minutes until cool enough to handle. Eat with celery and blue cheese dressing. If, like me, you forget to buy any premixed, combine about 2 ounces of Blue cheese with 1/4 cup sour cream OR mayonnaise OR even yogurt.
