STEWED CHICKEN 1 leg quarter 1-2 celery stalks, chopped roughly 1 carrot, chopped roughly 1 small onion, chopped roughly 2 tablespoons oil 1 quart water (or stock) DUMPLINGS 1/4 cup all-purpose flour 1/2 teaspoon baking powder 1/8 teaspoon salt 1 teaspoons margarine/butter 3 tablespoons milk [1 tsp parsley] Stir together flour, baking powder, and salt. Cut in margarine/butter until crumbly. Stir in milk to make a sticky dough. OR DUMPLINGS FROM BAKING MIX 1/4 cup baking mix 3-4 tablespoons milk Stir in milk until you have a sticky dough.
Use a heavy bottom 2-quart pan. Saute onion, celery and carrot about 5 minutes until onion is soft. Add chicken and cover with water. Bring to a boil, turn the heat back to low. Let simmer 30-40 minutes or until chicken is as you like it. . Add more water if needed, to keep the chicken JUST under the surface. Mix dumplings. Drop by spoonsful into boiling stew. Cover and simmer 15 minutes without lifting lid.
