I have been hankering for muffins for a few days, but alas the cupboard was bare. Warning: Homemade muffins do not have that over the top sugary sweetness of the kind that you buy with your latté. They are a nice quick bread when paired with a beverage but aren't intended to take the place of a Snickers bar. It was either cranberry sauce or banana, but I ate the banana.
CRANBERRY SAUCE MUFFINS Makes 6
1 cup flour 2 tablespoon sugar 1 ¼ teaspoon baking powder 1/8 teaspoon salt ½ cup milk ¼ cup whole cranberry sauce 1 egg 2 tablespoon oil Cooking spray
Preheat the oven to 400° Beat egg, add sugar, oil and salt. Mix in in milk and cranberry sauce Add flour and baking powder. Fill greased muffin tins three-fourths full. Bake for 18 to 20 minutes or until muffins test done.
