Chicken Pot Pie Stew 4 boneless, skinless chicken breasts, or thighs 5 redskin potatoes-diced, do not peel 1/4 c. chopped onion 1 c. sliced celery 1 can cream of chicken soup 1 c. chicken broth 1 t. pepper 1 t. Montreal chicken seasoning-I did not have any so used a sprinkle of Morton's Nature Seasoning 1 t. minced garlic 16 oz package frozen mixed vegetables
Place everything except vegetables in crock pot. Cover and cook 4-5 hours, low setting. Add vegetable and cook 1 more hour. Serve over biscuits or crescent rolls.

I made about 6 times this amount and did it in my roaster. When the chicken was done I removed it and chopped it then added it back in just before the vegetables. I kept some back for our supper, and still have some left which I might make into a real pot pie.

Yes, add the diced potatoes at the beginning. They were very, very soft, so you could add a little later if you wanted to.

Tammy, I was very excited to see that you have more than doubled the actual recipe to feed more people. I shared this with DH who does all the cooking each November during his deer hunting together with all the males in the family. Besides their usual Italian meals (spaghetti and sausage with peppers and onions), I always try to encourage him to make something new each year, at least one new recipe. I think this recipe got his attention.
He said that he'd like to try his hand at making this soon to see if he thinks it would be something the other guys would enjoy. Looks as of right now he will have another 4 or 5 relatives staying with him---3 are big eaters so he knows he will need to at least double or triple the recipe. There is always a good chance that relatives that have a place next door could join them too for a meal, so a larger amount it will be. They have both a roaster and a crockpot/slow cooker up there but thinking he will need to go with the roaster.

I started cooking this in the roaster around 11 p.m. and put the setting on defrost. I always wake a few times during the night, so got up every couple hours to check on it, and it was doing fine-it stayed on a slow simmer. Then I got up at six and finally added 4 bags of mixed veggies around 8 I think. I thought they needed to cook longer than an hour. Hope you all enjoy it.
