Carrot Cake-Tammy 2 c. flour 2 t. baking soda 1 t. baking powder 1 t. salt 2 t. cinnamon 1 3/4 c. sugar 1 c. oil 3 eggs 1 t. vanilla 2 c. shredded carrots 1 c. flaked coconut 1 c. chopped walnuts 1 can crushed pineapple, drained* Grease and flour a 9 x 13 baking pan. (Or can make about 31 cupcakes). Sift dry ingredients together. Make a well in the center. Add sugar, eggs, oil and vanilla. Beat with a wooden spoon until smooth. (I used a mixer). Stir in all remaining ingredients. Pour into prepared pan. Bake 45 minutes at 350*. For cupcakes bake about 17 minutes. Cool completely then frost with cream cheese icing. *The recipe does not say how big a can of pineapple. Probably 8 oz, but a 20 oz can is what I usually have so that is what I used.
