Not sure how many use an air fryer but I am trying to get the hang of mine. This is one recipe that I find comes out great.
Chicken Tenders
1 C unbleached, all-purpose flour 2 large eggs, lightly beaten 1 C panko breadcrumbs 1-1 1/2 pounds thinly sliced chicken breasts 3/4 tsp. kosher salt 3/4 tsp. freshly ground black pepper Olive oil for spraying
1. Put the flour, eggs and panko into individual containers large enough for dipping chicken.
2. Sprinkle the chicken with the salt and pepper completely, on both sides. Dredge each cutlet in flour and shake off the excess before dipping into eggs, and then finally coating evenly the the panko breadcrumbs.
3. Put the prepared cutlets in the basket and spray both sides with olive oil. Set the air fryer for 400° for 15 minutes. Cook until the chicken is evenly browned on both sides (flipping halfway through) and the internal temperature registers 165°.

If a person doesn't have an air fryer, sometimes counter top ovens with a convection setting and temp settings that go to 450 to 500 can do some of these recipes. I bought one of those wire crisper baskets a couple of years ago (from the company that does all those copper pans) which allows the air to flow around the food. I found one that was 9" round that fits in my Cuisinart. You may have to bake them longer and definitely have to turn over the food. But I've gotten pretty crisp results in mine.
