Potato Gratin with Boursin Cheese-Tammy
2 c. heavy cream 5 oz package Boursin cheese with herbs 3 lb. red new potatoes, scrubbed, sliced thin 1 1/2 t. chopped fresh parsley Preheat oven to 400*. Butter a 9 x 13 baking dish. Stir cream and cheese in a heavy pan until cheese melts and sauce is smooth. Arrange half of potatoes in the dish, slightly overlapping. Pour half of sauce over. Season each layer with salt and pepper. Repeat layers. Bake about 1 hour until potatoes are tender and lightly brown on top. Garnish with parsley.
