"Don't Peek" Chicken (Chicken Casserole)-cooktocook Serves:4 Cook Time:1 Hour, 15 Mins Super easy, tasty, and very tender!--Lori Ingredients: 1 cup uncooked long-grain rice 1 (10-3/4 oz.) can cream of mushroom soup 1 (10-3/4 oz.) can cream of celery soup 1 envelope onion soup mix (from a 2 oz. box) 1 soup can cold water 1 clove garlic, minced 1 tsp. chopped fresh parsley 1 tsp. Worcestershire sauce 1chicken (3-1/2 to 4 pounds), cut into 8 pieces Paprika for sprinkling Directions: 1--Preheat oven to 350*F. Coat a 9X13-inch baking dish with cooking spray. 2--In a large bowl, mix together rice, soups, soup mix, water, garlic, parsley, and Worcestershire sauce. 3--Pour mixture into prepared pan. Press chicken into mixture. Sprinkle with paprika, then cover tightly with aluminum foil. 4--Bake 1-1/4 hours. Do NOT open cover (not even to peek) during baking. My Notes: 1-I used Healthy Request soups and the lowest sodium onion soup mix I could find. 2-Used 2 garlic cloves. 3-Baking took longer then recipe said. I did not peek during the 1 hour and 15 minutes, but then checked on the casserole where I found the rice still firm and the chicken still needing cooking. I placed the foil back on the pan and baked it an additional 30 minutes, checking at 15 minutes, stirring the rice and flipping the chicken over. 4-Served with a green salad.
