Chocolate-Covered Cherry Brownies-emr 3/4 cup (1-1/2 sticks) butter 3 oz. unsweetened baking chocolate 1-1/2 cups granulated sugar 1 tsp. vanilla extract 3 large eggs 1 cup all-purpose flour 1/4 tsp. salt 1 (13-oz) jar marshmallow creme 2/3 cup chopped maraschino cherries, well drained Preheat oven to 350 degrees. Grease 9x13x2 pan. In heavy 2-quart saucepan over low heat, melt butter and baking chocolate, stirring constantly. Remove from heat. Stir in sugar, vanilla, and eggs until blended. Stir in flour and salt until smooth. Spread in prepared pan. In medium bowl, mix marshmallow creme and cherries. Spoon by teaspoonfuls onto batter. With knife, swirl lightly. Bake 30-40 minutes or until marshmallow mixture is light golden brown. Cool completely, about 1 hour. Spread Chocolate-Cherry Glaze (below) over brownies. Refrigerate 30 minutes or until glaze is set. Cut into 48 squares. Chocolate-Cherry Glaze 1 cup (6 oz) semisweet chocolate chips 4 Tbsp. butter 1 Tbsp. light corn syrup 2 Tbsp. maraschino cherry juice Mix chocolate chips, butter and light corn syrup in 1-quart saucepan. Stir constantly over low heat until melted. Stir in cherry juice. Note: I increased the amount of marshmallow creme and cherries from the original recipe.
