Cream Cheese French Toast Bake-Tammy This is from Pillsbury. 8 oz container pineapple cream cheese spread-I could not find so used spreadable strawberry cream cheese 1 lb loaf of French bread, cut into 24 3/4 inch slices 4 eggs 1 c. milk 1/4 c. sugar 1/4 t. salt 1/4 t. ground cinnamon 2 T. butter, melted Topping: 3 c. fresh strawberries 1/4 c. sugar 2 T. amaretto-optional (I did not have so used fresh orange juice) 1 C. fresh blueberries (I used frozen) Spray a 9 x 13 pan with cooking spray. Spread about 1 T. of cream cheese on 12 slices of bread. Top with remaining plain bread slices to make 12 sandwiches. Place in prepared baking dish. In a medium bowl, beat eggs. Add milk, 1/4 c. sugar, salt and cinnamon. Beat well. Pour over sandwiches. Let stand at room temperature about 5 minutes. Turn sandwiches over. Cover and chill 8 hours or overnight. Chop 1 c. of strawberries. Refrigerate the remaining berries. In a nonmetal bowl, gently stir chopped berries, 1/4 c. sugar and amaretto if using. Cover and chill 8 hours or overnight. Heat oven to 400*. Uncover baking dish. Drizzle sandwiches with melted butter. Bake 25 to 30 minutes or until golden brown. Meanwhile slice remaining strawberries and add blueberries to chilled strawberry mixture. Mix lightly. Serve French toast with berry topping.
