My friend served this for Christmas dinner. Similar to pecan pie but with a wonderful maple flavor. She cranked up the maple flavor by using their own granulated maple sugar instead of brown sugar. This isn't easy to find but if you have some--it made an outstanding pie. If you cannot find dark maple syrup and need to use a lighter grade, you might add a little touch of maple flavoring, although I can't tell you how much. Perhaps 1/2 to 1 tsp.? I think it's illegal here to cook with maple flavoring when we have the real stuff on hand! LOL! Birdy Maple Walnut Pie-Birdy Recipe courtesy of: Burt Homestead Farm, Maple Products, Cold Brook, NY 2 eggs 1/2 c. lightly packed brown sugar 2 T. flour 1 cup maple syrup (Real maple syrup, not pancake syrup. Dark cooking grade is best) 3/4 tsp. vanilla 2/3 c. coarsely chopped walnuts 9" unbaked pastry shell Beat eggs slightly. Stir in a blend of brown sugar and flour. Mix in remaining ingredients.
