This recipe is designed to use real maple syrup, not pancake syrup. Birdy
Maple Corn Muffins-birdy Recipe courtesy of: Burt Homestead Farm, Maple Products, Cold Brook, NY
• 1 1/3 cups all-purpose flour • 2/3 cups corn meal • 1 1/2 tsp. baking powder • 1 1/2 tsp. baking soda • 1/2 tsp. salt Beat lightly: • 2 eggs • 1 cup buttermilk • 1/3 cups dark maple syrup • 1/2 cups melted butter
Combine with dry ingredients just until mixed.
Put into 12 greased muffin tins and bake at 425 F. for about 15 minutes or until done.
