CRANBERRY CHICKEN-Tasty tasty 2 tsp butter 4 skinless, boneless chicken breasts 1 lb sliced mushrooms 1/2 cup water or white wine 1/2 can whole berry cranberry sauce generous pinches salt and freshly ground pepper
Melt butter in a large frying pan over high heat. Add chicken. Cook until golden brown, 3 - 4 minutes per side. Remove to a large plate. Add the mushrooms and water to the pan. Stir often until the mushrooms start to soften, about 3 - 4 minutes. Stir in the cranberry sauce, salt and pepper. Stir often until the sauce has melted. Reduce the heat to medium low. Return chicken to the pan. Cover and cook, stirring and turning occasionally. Until the chicken is springy when pressed, about 8 - 10 minutes.
