Yellow Squash Corn Bread Bake-keysc
5-6 yellow squash, sliced 1 cup all purpose flour 1 cup cornmeal 2 Tbsp. Sugar 1 tsp. salt 3 and 1/2 tsp. baking powder 1 egg 1 cup buttermilk 1/3 cup oil 1/3 cup shredded cheddar cheese 1/3 cup sliced jalapeno peppers
Preheat oven to 375 degrees. Saute yellow squash in a little oil Add salt and pepper to taste. Mix flour, meal sugar and salt and baking powder in a mixing bowl. Add egg, buttermilk, and oil and mix until combined. Stir in cheese and peppers. Layer squash in a round casserole dish. Pour cornbread mix on top and spread evenly. Bake for 20 to 25 minutes or until cornbread is brown and baked through.
