Chocolate Thumbprint Cookies-mnwildflowers
1/2 C butter or margarine, softened 2/3 C sugar 1 egg yolk 2 Tbs milk 1 tsp vanilla 1 C ap flour 1/3 C cocoa 1/4 tsp salt Cream together butter, sugar, egg yolk, milk, and vanilla. Stir in flour and cocoa. The dough will be sticky so cover and refrigerate until firm enough to handle. Preheat oven to 350°. It says to lightly greased cookie sheet, but I baked mine on parchment paper. Shape oh into 1 inch balls. I rolled my balls then shaped them more like ovals by rolling them with my palm onto the cookie sheet. I wanted to have a bigger area for my thumbprint, and I have big thumbs! Bake for 10 to 12 minutes or until set. Halfway through I did check mine and slightly tapped to the centers where the thumbprint was because they were rising a little bit in the middle. Cool one minute on pan then transfer to wire rack to finish cooling. Says it makes 24 but I got 22. For the peanut butter frosting I used 1 cup powdered sugar and about 2-3 Tbs pb (I didn’t measure). I whisked those together then added enough milk to make a thick but smooth frosting. I spooned about a rounded teaspoon in to the thumbprint of the cooled cookies and had just the right amount. I finished mine off by breaking apart a small dark chocolate candy bar and placing a little wedge of chocolate in the center of the peanut butter frosting.
