PUMPKIN COOKIES-Tammy 1 c. butter 1 c. firmly packed dark brown sugar 1 egg 1 c. canned pumpkin 2 c. flour – divided 1 c. golden raisins ½ c. chopped walnuts 2 t. grated orange peel 1 t. baking powder 1 t. pumpkin pie spice ½ t. baking soda ½ t. salt 3 T. butter, softened 3 c. powdered sugar ¼ c. orange juice A few drops orange extract Dash salt Preheat oven to 350*. Cream butter; gradually add brown sugar. Beat well. Beat in egg and pumpkin. In another small bowl, mix ¼ c. flour with raisins, nuts, and peel. Set aside. Combine remaining flour, baking powder, pumpkin pie spice, baking soda, and salt. Gradually add to creamed mixture, beating just to blend. Stir in the raisin mixture. Drop by teaspoonful onto greased baking sheets. Bake 12 minutes. Remove to racks to cool. Combine remaining butter, powdered sugar, (I sift it), then slowly add juice.
