Chicken Tetrazzini Florentine-Tammy 4 oz spaghetti, broken 4 oz baby spinach 1 T. oil 4 oz fresh mushrooms, sliced 1 small onion, chopped 1 c. milk ½ tub Philadelphia herb & garlic light cream cheese spread 2 c. shredded chicken ¼ c. shredded Parmesan ¾ c. shredded Mozzarella Heat oven to 350. Cook pasta-omit salt. Add spinach to water the last one minute of cooking. Meanwhile heat oil in a nonstick skillet, over med heat. Add onions and mushrooms. Cook and stir for about 4 minutes, or until mushrooms release their juices. Add the milk and cream cheese. Cook 3-5 min, until cheese is melted and sauce is well blended. Stir constantly. Drain pasta, rinse with cold water. Drain well. Return to saucepan. Add chicken, mushroom sauce and 2 T. Parmesan. Mix well, pour into an 8x8 baking dish, coated with Pam. Cover and bake 25 min.
