Potato & Bacon Casserole-cooktocook
Ingredients: 4 cups (32oz.) shredded hash brown potatoes, thawed 1/2 chopped onion 8 bacon strips, cooked and crumbled (I had 12 slices and used them all) 4oz. cheddar cheese, shredded 1 egg 1 (12oz.) can evaporated milk 1/2 tsp. seasoned salt
Directions: Preheat oven to 350*. Spray an 8"X8" square (I used a 9"X13') baking dish with non-stick spray. Layer half the potatoes, onion, bacon, and cheese. Repeat layers. In a small bowl, whisk milk, egg, and salt. Pour over the potato layers. Cover and bake 30 minutes; uncover and bake another 5-10 minutes.
I copied this Farm Wives & Hometown Recipe on TOH back on 6/12/2011 but just made it for the first time the other day. It was easy to prepare and very tasty. Although the recipe says to bake it in a 8X8, I found it completely filled a 9X13 pan right to the top. This would be good for a large family or church gathering. Lori
