I found this on recipes.com: www.myrecipes.com/recipe/caramelized-peaches-with-ice-creamMy tweaks are below. Caramelized Peaches with Ice Cream-emr 4 Tbsp. unsalted butter, cut into pieces 3/4 cup sugar 1 tsp. vanilla extract 1/4 cup water 6 peaches, unpeeled 1 pint vanilla ice cream Heat oven to 400 degrees. In a 9x13 baking dish, combine the butter, sugar, vanilla, and water. Place the dish in the oven until the butter melts. Remove from oven and stir to combine. Cut each peach in half and remove the pits. Arrange the peach halves in the dish cut side down. Roast until the peaches are tender, about 20 minutes. If desires, slip the peach skins off and discard. Divide the warm peach halves amonth 6 bowls, cut side up. Spoon the pan juices over the top and serve with a scoop of ice cream. *I peeled and sliced my peaches. *Used brown sugar. *Added the vanilla after butter had melted. *I think when making again, I will decrease the amount of water. *This would be delicious over pound cake as well.
